Pecan Cookies

I love these cookies. No eggs. No baking soda.

DISCLAIMER – IF YOU HAVE A NUT ALLERGY, DO NOT MAKE OR EAT THESE COOKIES!

I know, I know, they’re nut cookies, I shouldn’t have to put that, but I do.

Pecan Cookies:

1/2 cup (1 stick) unsalted butter

1/3-1/2 cup brown sugar

1/4 tsp salt

1 cup flour (I used 1/3 cup whole wheat flour & 2/3 cup white flour)

dash vanilla

1 cup chopped pecans

1/2 cup chocolate chips

 

1) Preheat oven to 350 F.

2) Cream butter and sugar.

3) Add salt, flour, and vanilla. Mix well.

4) Stir in pecans by hand. Either stir in chips, or melt chips in microwave safe bowl for 1 minute on high, stir, and put aside.

5) With very clean hands, grab dough by small fists and put on lined cookie sheet. Should make between 15-20 cookies. Bake for 10 minutes at 350 F.

6) As cookies are cooling, if you melted the chips instead of mixing them in, drizzle the melted chips over the cookies.
