Parmesan Chicken (not chicken parmigian!)

1+ lbs of boneless, skinless chicken breast

~1/3 cup mayo

~1/3 cup parmesan cheese


1) Preheat oven to 350 F

2) Mix mayo and parmesan in bowl

3) Rinse and place chicken breasts in glass or metal baking pan

4) Spread mayo/parmesan mixture over tops of chicken breasts

5) Bake ~20+ minutes, depending upon thickness of chicken breasts, until juices run clear

* Yes, this is the same base for artichoke dip from the 1980s

** Cooking undercooked chicken can be hazardous to your health

*** I like to serve this with either a salad or green beans or broccoli, along with whole wheat cous cous or whole wheat gnocchi
